The reason why the fish is always on the menu

Fran Boyd emailed us the picture above to explain that she sent it to some friends of hers and, being fish-lovers I guess, they were so impressed that they made a booking to the restaurant. Interestingly the crispy fish in the photo has been on the menu since day one… and with good reason: people talk about it. More interesting than that is it’s the easiest dish to make: especially when you use the Spirit House Tamarind-Chilli Sauce which is available from your nearest Spirit House stockist.

Tradition Vs. Food Storage Laws

If you’ve every been to Chinatown the you’ve seen ducks hanging in the window- no heat lamps, and probably served warm if you order it with some rice. If all this sounds like a recipe for food poisoning, think again. Food safety officials are now realising that these ducks have been displayed and served this way for thousands of years with no known food-poisoning incidents. Apparently the way the ducks are prepared actually provides a proctective barrier against bacteria and can be displayed at ambient temperatures for 22 hours… so forget your KFC, get some duck and rice next time you’re in Chinatown.
great label makes eating fun

Found this cool diagram on a chopstick pack while surfing the net. The reason I post it here is many people ask us what you need to make a restaurant a success; part of the answer is you have to give people an experience! This small design on a chopstick pack gives people an experience, an experience that is worth talking about… does it work? Well, that packet just had me promote fujiya sushi and it didn’t cost them a cent. So give your customers an experience… that’s what they want.

Rice barge trip to Ayutaya from Bangkok
